Executive Chef at The Xara Palace Relais & Châteaux with over 22 years of experience as a professional chef. As a chef he was inspired and influenced by his grandfather, who owned and operated a very well-known catering establishment in Mellieha, after having watched his family work hands-on, resulting in a growing passion for this industry. His cuisine gives an ode to sustainability whilst supporting local produce as in Malta we have a plethora of interesting ingredients and produce which deserve respect, love and care hence the importance of supporting local fishermen and farmers. He joined the Institute of Tourism Studies where he studied for four years focusing on Food Preparation and Production. During this period he achieved WSET Wines and Spirits and spent his first internship in the acclaimed Le Meridien London Gatwick. It is there that he understood that catering is his life and future. During his studies he also had a privileged opportunity to spend time at the ‘Gavroche’ with acclaimed French Chef and Restaurateur, Michel Roux and at the prestigious 3 Michelin Starred restaurant ‘St. Hubertus’ in Italy.
